Vegan baking



This week we made some yummy vegan chocolate chip cookies! The kids liked them and didn't question there taste or texture so yay!! I enjoyed them too :) I will be making lots more of these in the future! Eating vegan has been a great experience and I genuinely enjoy it. It is amazing how fast it opens your eyes to what is really in your food.

My New Years Resolution







This year I decided I want to be healthier inside and out. I have decided to try a Vegan lifestyle for 30 days. I'm hoping at the 30 days I will decide to do it for much longer. For a few months I have been reading about vegan living so I would be aware of what I was getting into. I found the Idiot's guide to Vegan living very helpful :) and so far PETA'S Vegan college cookbook a yummy resource. I'm not in college of course, but the idea of cheap and simple recipes is intriguing especially when no one wants to share my cooking creations. Today was day 1 and I was very excited. For Breakfast I had some yummy toast with natural organic peanut butter and slices of banana, with a cup of blk coffee with some raw sugar. For lunch I had a cucumber and tomato salad with vegan safe Italian dressing, super yummy. Then for dinner I made veggie protein sausage with baked french fries and asparagus. I'm really looking forward to this new lifestyle. I think being a vegan will bring a sense of confidence and control into my life, that will radiate positivity into other aspect of my life. In other terms I think its a good thing!
